    Family did not enjoy this. I made a double batch so I have lots left over and nobody wants to eat it...definitely will not be making it again!

    Good but next time either make a cornbread batter from scratch or find one that isn't as sweet as the Jiffy mix - too much sugar took away from the flavor of the casserole!

    Did not have cream corn so added regular corn. Added second half of enchilada sauce in with the meat & topped with only 1/2 cup of shredded cheese. My kids LOVED it!

    My 14 yr old son followed the recipe but doubled it. I added the enchilada sauce with the meat and on top of cornbread and saved some for later. I bought jalapenos and cilantro and Sour Cream to garnish. I also have green onions as an option.

    Wonderful and easy! Used a packet of taco seasoning instead of individual spices. Be it could easy to double recipe using 9 x 13 pan to feed a lot

    I made this and it was ok. I used chicken instead of beef. I taste tested it winded up eating the cornbread separately from the other ingredients. Don’t think I will make again.

    I made this for a potluck and everyone loved it. I only changed only one thing, I put the remaining enenchilada chilada sauce in the meat mixture.

    This was a great recipe! I used heavy cream instead of creamed corn because I was out. I added Rotel tomatoes with green chili’s, a can of diced chili’s to the meat. For the spices: cumin , chili powder, salt , cayenne pepper, oregano, smoked paprika , garlic powder and ground coriander to taste. What a great recipe!!!!

    Delicious! I forgot to get creamed corn at the store but luckily had some frozen corn in the freezer so I used a little extra sour cream and threw in some frozen corn. Plus used taco season on the meat instead of the cumin, chili powder and salt.

    I also added a pound of chorizo to the pound of beef. Once it was out of the oven, I sprinkled diced avocados and tomatoes on top. It was delicious!
